Stroopwafels: A Beloved Dutch Tradition

Stroopwafels are a beloved Dutch delicacy that originated in the city of Gouda in the late 18th or early 19th century. According to legend, a local baker—possibly Gerard Kamphuisen—created the first stroopwafel using leftover breadcrumbs and syrup (stroop) as a way to minimize waste. These early versions were known as "poor man's cookies" because they were inexpensive to make.


Over time, the recipe evolved into the modern stroopwafel, consisting of two thin, crisp waffle layers held together by a rich, caramel-like syrup filling. By the 19th century, stroopwafels had gained popularity throughout the Netherlands, with numerous vendors and bakeries crafting their own unique variations.


Perfect Balance of Texture and Flavour


Stroopwafels are crispy on the outside and gooey on the inside, thanks to the thin waffle layers and rich syrup filling. This contrast makes them irresistibly satisfying with every bite.


A Symbol of Dutch Pride


For over 200 years, stroopwafels have been a cherished part of Dutch culinary heritage. Much like tulips, windmills, and cheese, they have become a symbol of Dutch identity.


Considered a national treasure of the Netherlands, even the Dutch King recognizes their cultural significance—he often brings stroopwafels as gifts during state visits, showcasing a piece of the Netherlands abroad. Additionally, these iconic waffles play a role in royal celebrations, as they are enjoyed during important national milestones and festivities. 


Global Appeal and Versatility


From street vendors to high-end cafés, stroopwafels have evolved into a worldwide sensation, inspiring creative toppings, and even modern twists like ice cream sandwiches and desserts.

How to Enjoy Stroopwafels the Dutch Way

Eating a stroopwafel is more than just a snack—it’s an experience. While they’re delicious on their own, the traditional Dutch way of enjoying stroopwafels brings out their full flavour and texture.


  1. Pair It with a Hot Drink
    Stroopwafels are best enjoyed with a hot cup of coffee, tea, or hot chocolate. The warmth enhances the caramel filling, making it gooey and irresistible.
  2. Let It Soften
    Place the stroopwafel on top of your cup, letting it rest like a lid. The rising steam will gently warm the waffle, softening the syrup inside for the perfect chewy texture.
  3. Wait for the Perfect Moment
    After about one to two minutes, the caramel filling becomes melty and warm—just enough to create that perfect bite. Be patient; the reward is worth it!
  4. Savor Every Bite
    Once softened, take a bite and enjoy the crispy, chewy, and caramel-rich goodness. The contrast of textures and flavors makes for a truly authentic Dutch treat.


On the Go? No Problem!
If you don’t have a hot drink, stroopwafels are still delicious straight from the package. Some even like to warm them slightly in a microwave or on top of a warm plate for the same softening effect.
